Southwest White Chili

This recipe has been a Bodyshaping Boot Camp favorite for the past year or more. We don't add any of the traditional thickeners but instead mash up some of the beans before serving. This is a trick you can use in other stews and soups. We spice ours up!

Ingredients
  • 1 Tbsp. olive oil
  • 1 1/2 pound boneless, skinless chicken breast, cut into small cubes
  • 1/2 cup chopped onion
  • 2 cups chicken broth
  • 4oz. can chopped green chilies
  • 2 cans white kidney beans (cannelloni), undrained
  • 1 clove minced garlic
Southwest Spice Blend:
  • 1/2 tsp ground red pepper
  • 1/2 tesp chili powder
  • 2 tsp ground cumin
  • 1 tsp oregano
  • 1 tsp cilantro
  • 2-3 Tbsp green Tabasco (optional if you like your chili with a little kick)
Directions:
Heat oil in large saucepan over medium-high heat. Add chicken and onions, cook until chicken no longer pink inside. Stir in broth, green chilies, garlic and spice blend. Simmer for 15-20 minutes. Stir in beans. With potato masher, smash about 1/4 of the beans to thicken the chili. Simmer for 15 minutes. Salt and pepper to taste, and then serve.

Fish Tacos with Chipotle Cream

We love this recipe from Ellie Krieger's cookbook, The Food You Crave: Luscious Recipes for a Healthy Life. It is very healthy with only a small amount of mayo that would not be BBC approved. The whole cookbook is worth purchasing if your looking for quick, easy and generally healthy recipes that the whole family will eat.
Ingredients
Fish:
  • 2 tablespoons olive oil
  • 2 tablespoons freshly squeezed lime juice
  • 1/4 teaspoon salt
  • Freshly ground black pepper
  • 1 pound white flaky fish fillet, like tilapia or halibut
Chipotle cream:
  • 1/2 cup plain nonfat yogurt
  • 2 tablespoons mayonnaise
  • 2 teaspoons chipotle pepper, in adobo sauce
  • 8 (6-inch) corn tortillas
  • 1 1/2 cups shredded green cabbage or lettuce
  • 1/2 cup corn kernels (thawed if frozen)
  • 1/4 cup fresh cilantro leaves
  • Lime wedges
Directions
In a small bowl, whisk together the oil, lime juice, salt and pepper. Pour over the fish fillets and let marinate for 20 minutes. Put the yogurt into a strainer lined with apaper towel and place over a bowl to drain and thicken for 20 minutes.

Remove the fish from the marinade and grill on a preheated grill or nonstick grill pan over a medium-high heat until cooked thorough, about 3 minutes per side. Set the fish aside on a plate for 5 minutes.

In a small bowl combine the thickened yogurt, mayonnaise, and chipotle pepper.

Heat the tortillas on the grill or grill pan for 30 seconds on each side.

Flake the fish with a fork. Top each tortilla with 1 tablespoon of the chipotle cream. Top with fish, cabbage, corn and cilantro and serve with lime wedges.




Chocolate Angel Food Cake for Valentine's Day


Ingredients:
  • 1 1/2 cups granulated sugar, divided
  • 3/4 cup sifted cake flour
  • 1/4 cup unsweetened cocoa powder
  • 1/4 teaspoon salt
  • 12 egg whites
  • 1 1/2 teaspoons cream of tartar
  • 1 1/2 teaspoons vanilla
Preheat oven to 375 F. Sift together 3/4 cup granulated sugar, flour cocoa and salt two times; set aside. Beat egg whites in large bowl at medium speed with electric mixer until foamy and add cream of tartar; beat at high speed until soft peaks form. Gradually add remaining 3/4 cup granulated sugar, 2 tablespoons at a time, beating until stiff peaks form. Blend in vanilla.

Sift about one fourth of cocoa mixture over egg white mixture; fold in. Repeat with remaining cocoa mixture. Pour into ungreased 10 inch tube pan. Bake 35-40 minutes, or until cake springs back when lightly touched with finger. Invert pan over heat-proof funnel or bottle; allow cake to cool completely before removing from pan. Turn cake onto cake plate. Dust lightly with powdered sugar or cocoa powder just before serving. To add color and contrast top with fat-free whipped topping and fresh strawberries.

The cake serves 10-12 and is great tasting with 0 calories from fat! Enjoy
